Witness Narito Ishii, Sydney’s most revered fishmonger—whose deep expertise in Asian species and unshakeable relationships with top sushi chefs make him the go-to sourcing genius for the city’s elite omakase restaurants.
At the helm preparing the Omakase menu is Toshihiko “Toshi” Oe, the legendary sushi maestro behind the famed six-seat omakase counter Sushi Oe in Cammeray. Known for crafting 30+ course experiences of exquisite precision and creativity, Chef Oe’s waitlist is longer than our wine list and we're bringing his fame and magic to the Wine Library - for you!

We’re breaking Tim Perlstone’s heart for this one — pulling off a full-blown cellar raid to ensure magical pairings for this sensational Omakase Menu. Expect aromatic delights from Germany and Alsace, mineral-precise whites from Jura, and sublime Pinot experiences from Burgundy. Ahh yes Bluefin-and-Burgundy — it’s one of our favorite pairings. Wine pairings are not mandatory - we of course will have our full wine list available for all your glass and bottle needs.
