Entropy Wine List Takeover with Ryan Ponsford

Minimal-intervention winemaker and 2022 Young Gun of Wine Winner Ryan Ponsford of Entropy Wines in the Baw Baw Shire (Victoria) will be taking over the CBD’s cellar door at The Wine Bar in Martin Place.

This is your chance to meet one of the most dedicated young winemakers in Australia, who transitioned from a career as an artist into winemaking in the relatively uncharted territory of the West Gippsland region. His cool-climate expressions Syrah, Pinot Noir, Semillon and Sauvignon Blanc have consistently impressed the Australian wine community.

The list for the evening boasts a selection of Entropy classics, as well as their latest 2024 vintage – which Ryan has called one of his cleanest, most precise, and most expressive. Most excitingly, attendees will have the extra special experience of enjoying the very first tastes of Entropy’s brand new Savagnin 12 307, which will be released the week of the takeover.
